Assuming you want the aggregated market maker PnL: Disregarding Maker Rebates from the exchange, you can reconstruct the market makers PnL using their trades and prices, not spreads alone. If they hold inventory and the price moves against them it will not show up if you just check the spread. You'd need to know the price too which shouldn't be too hard tho. Their inventory you can reconstruct from trades.
